Blueberry Muffins
These muffins are soft, lightly sweet, and filled with juicy blueberries, perfect for breakfast, afternoon coffee, or a simple homemade treat.
Ingredients:
1 ¾ cups all-purpose flour
¾ cup sugar
2 tsp baking powder
½ tsp salt
½ cup milk
½ cup vegetable oil or melted butter
2 eggs
1 tsp vanilla extract
1 ½ cups fresh or frozen blueberriesOptional topping:
2 TBLS sugar for sprinkling
Instructions:1. Preheat oven to 375°F and line a muffin tin with paper liners or lightly grease the cups.2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.3. In another bowl, mix the milk, oil (or melted butter), eggs, and vanilla until smooth.4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.5. Gently fold in the blueberries.6. Divide the batter evenly between the muffin cups, filling each about ¾ full. Sprinkle a little sugar on top if desired.7. Bake for 18–22 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.8. Let the muffins cool in the pan for a few minutes, then transfer to a wire rack.Simple Tip:If using frozen blueberries, toss them lightly in a tablespoon of flour before adding them to the batter to help prevent them from sinking.
